Italian salad dressing makes a good marinade. It's simple and it marinades the meat well.

Along those lines, I like to use Red Wine Vinegar dressing, but don't saok the meat over night. The vinegar will break down the meat too much and turn it to mush. 20 to 30 minutes and then slap those babies on the grill.

I like to let them sit for a couple hours in the fridge, covered. Make sure they are thawed first before you start the marinade.

I am in love with "The Cajun Injector". Works great.

My favorite recipe is to take and inject 1.5oz of marinade per pound of meat, shake on some "cajun spice" and deep fry for 7min per pound. Comes out cooked roughly medium with a crunchy outside. Nice, tender and juicy.

I like to put some Tony Cacheries (sp?) fairly liberally, and leave in the refrigerator for a few hours. Then grill to medium, ......Great Flavor!!!

I dont use alot of spice but..I have soaked venen in milk or buttermilk for a day or two and that will remove some of the gameness. You cant go wrong with the Italian dressing marinade.
