Here is what I do with them. I ususally just breast out the geese I shoot. So this recipe is for goose breast but I bet you can use it on a fully plucked bird as well.

1 cup Apple Juice
1 cup Orange Juice
Bacon strips
Salt & Pepper to taste

Pour the apple and orange juice in an oven cooking bag.

Wrap the goose breasts with bacon strips. I usually use 4 or 5 per breast. Salt and pepper to taste. Be careful of too much salt due to bacon. Place goose breasts in cooking bag with the apple and orange juice and bake for 40 minutes at 375.

It is good keeps the meat real moist.

Crockpot Goose

1 goose (2 Breast Fillets)

1 lb. fresh mushrooms

1 medium onion, chopped

4 large stalks celery, chopped

4 yellow hot peppers, chopped

1 tbs. salt

1 tsp. pepper

1 can cream of mushroom soup

1/2 can condensed milk

1/3 cup flour

Rinse goose breasts, pat dry, then cut into bite-size pieces. Place meat in Crockpot; add chopped vegetables, salt, pepper, soup and milk. Cook on low heat for eight to 10 hours.

Mix flour with small amount of water, stir into Crockpot mixture then cook for another 20 to 30 minutes. Serve over white rice, wild rice, noodles or mashed potatoes.

Tabasco or Louisiana hot sauce adds some zip.
