ok i have shot a bunch of rabbit over the years and never can find a way to coook them so that they actually taste goood they always are very tough and chewy...... does anyone have any good recipes for rabbit

The best way to make them taste better is to bone-out the meat before cooking or marinating them, that's for sure. Next best thing to do is marinate in some sort of marinade, at least overnight, before cooking. Any good, bottled Italian salad dressing will work. Slow cooking in some sort of liquid is a surefire way to make it tender. Cut the meat in bite size pieces first. Add liquid, like chicken broth. Bring to a boil, cover and simmer gently for about 2+ hours. Then the meat can be added to just about any stew, pot-pie, etc recipe. A good one uses chicken broth and veggies like carrots and peas. Thicken with cornstarch and water, once it's fully cooked. It can then be served as stew, over noodles or biscuits, or placed in a pie shell and baked as pot-pie. Very tasty either way.

Hey I have a couple of good recipes for rabbit. PM me and I will get them I am at work right now and don['t have them at hand.

To things to remember when cooking rabbit and squirrel, I always bring them in salt water before I freeze them then when I am going to cook them I take them out and boil them in water take the meat off the bone then cook them. I have a great creamy baked rabbit dish. I will get you.

Also look on cooks.com they have tons of recipies for almost anything.

The trick is to simmer on low heat for about 2 hours or so. I've used chicken broth and veggies--good eatin'

crock pot with veggies and the last 20 minutes add golden mushroom soup - they are also good fried

I let the rabbit age for at least 3 days before cooking, no matter what I plan to do. I either boil the meat off the bone or debone it first, then boil it. I usually make bbq'd rabbit. I have debone it and slow cook it with your favorite seasonings.

The backstraps are a totally different thing. I cut them off the rabbit and then try and cut them into equal lengths. I let them soak in a marinade for at least 30 minutes and up to 2 hours. While waiting on them to soak up soe of the marinade, I mix spices with plain white flour/white cornmeal mix. I roll the pieces in the flour/cornmeal, dip them in egg and roll them again. I deep fry them until they float. Try not to eat them all as soon as they come out of the grease :mrgreen: .
Curiosity killed the cat, but I was a suspect for a while......
