Removing fat and flesh from (thawed) deer hide?

What is a good way to remove the fat and flesh from a deer hide? Most of the time they are thawed (salted), not fresh. I have used these scrapers that look like a drywall tool but it does not work very well.
Anyone have ay luck with something out there?
Any fleshing knives that work good..like a draw knife?

when my dad owned his shop he used those utility knives that break off. they worked great.
