Both alfalfa and clover have deep growing roots that can do very well in the rocky unimproved soils like you mention, some of those blends like whitetail institutes 'alfa rack' can thrive in well drained rocky soils on hillsides, if they get enough moisture.
It does need about 30" or more of moisture a year but I doubt you'll have a problem getting that in Alabama.
Most agree that planting several small (1/2 - 2 acre) honey hole plots leads to much better hunting than just putting in one huge plot that covers several to many acres, it creates different feeding areas to hunt so you can use the wind direction changes to your advantage and little honey hole plots surrounded by woods or other cover make the deer feel more safe so they may be more inclined to be feeding in the small plots during daylight.
